# Carrot recipes
The carrot is a sweet root vegetable, usually orange or white with a crisp texture. The edible part of a carrot is called a taproot. Its distinct colour comes from the high amount of carotene. The carrot is a biennial plant which grows leaves in the Spring and Summer.
Western carrot cultivars are commonly classified by the shape of their root. Chantenay carrots are shorter but have greater girth, Danvers tend to have a conical shape and pointed end, Imperator carrots tend to be the most common carrot shape and finally Nantes carrots are cylindrical in shape, rounded at both the top and tip.

Growing carrots
1/ Start digging the soil in late Winter/Spring until it has a fine, granular texture.
2/ Pick a spot that has good sun coverage.
3/Sow the seeds thinly around 2 to 3 cm’s deep, cover the seeds once in place.
4/Once carrot seeds have germinated and producing leaves, thin the seedlings to 5 cm’s between plants.
5/ Keep plants well watered and start pulling from June/July.
